DIY Melona Bars

The weather is heating up and that means it’s time for popsicles! This recipe is super easy. The only ingredient that you may have difficulty finding is guar gum, but you should be able to pick it up at your local health food store.

3 cups of fresh honeydew (about half of a melon — add +1 cup for a stronger flavour)
1/2 cup litchi juice (or other light juice)
1/2 whipping cream (35% milk fat)
1/4 tsp. guar gum (optional — it makes the popsicles smoother and less icy)

Equipment: blender, measuring cup, measuring spoons, spoon for stirring, small bowl, large bowl, popsicle molds (mine are from IKEA)

Directions: Sprinkle 1/4 tsp. of guar gum over the litchi juice and stir to combine. Blend up your honeydew and measure out 3 cups. Add it to a large bowl, then add your whipping cream and litchi juice / guar gum. Give everything a good stir, fill up your popsicles molds, freeze them for at least 4 hours, and you’re done!

And the flavour? It tastes almost like the real Melona Bar (shhh, don’t tell them!) but it doesn’t have any extra preservatives and chemicals. Yay! And you can substitute lots of other fruits for the honeydew — mango, strawberry, blueberry, peach — or get fancy and make layered popsicles. You can also use other juices (apple, pear, white grape, etc.) instead of litchi juice but of course the flavour will change a bit.
